5-Ingredient Blackberry Recipes for Camp Cooking

Three easy 5-ingredient blackberry recipes for tent camping: a quick skillet cobbler, a no-cook whip, and a simple sauce for pancakes or oatmeal.

Ingredients

  • 2 cups fresh blackberries or frozen, slightly thawed
  • 1 cup all-purpose flour
  • 1/2 cup sugar plus 2 tablespoons for topping
  • 1 teaspoon baking powder
  • 1/2 cup milk or non-dairy milk

Method

  1. Prepare the campfire or camp stove for medium heat. Grease a 10-inch cast iron skillet or a camp-safe baking dish.
  2. In a bowl, mix flour, 1/2 cup sugar, and baking powder. Stir in milk until just combined. The batter will be thick.
  3. Spread the blackberries evenly in the skillet. Drop spoonfuls of batter over the berries, leaving some gaps for steam.
  4. Sprinkle remaining 2 tablespoons of sugar over the top. Cover the skillet with foil or a lid.
  5. Cook over medium heat for 15-20 minutes, rotating the skillet every 5 minutes for even heat. The cobbler is done when the top is golden and the berries bubble. Let cool for 5 minutes before serving.
