Weeknight Grape Recipes for Camping: Sweet & Savory Ideas

Easy campfire foil packet with chicken, grapes, and rosemary — a sweet-savory dinner that cooks in 15 minutes with zero cleanup.

Ingredients
  

  • 2 boneless skinless chicken thighs about 6 oz each
  • 1 cup seedless red grapes halved
  • 1 tbsp olive oil
  • 1 tsp fresh rosemary chopped, or 1/2 tsp dried
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Tear two large sheets of heavy-duty aluminum foil, each about 12x18 inches.
  2. In a bowl, toss the chicken thighs with olive oil, rosemary, salt, and pepper.
  3. Place one chicken thigh in the center of each foil sheet. Scatter the halved grapes around the chicken.
  4. Fold the foil over the chicken and grapes, then crimp the edges tightly to seal. Make sure there's a little room for steam inside.
  5. Place the foil packets on a campfire grate over medium coals or on a camp stove over medium heat. Cook for 12-15 minutes, flipping once halfway.
  6. Carefully open one packet to check that the chicken is cooked through (165°F internal temperature). Let rest for 2 minutes before serving directly from the packet.
