The Best Pasta Salad Dressing for Camping

A simple, no-mayo vinaigrette dressing that stays fresh and flavorful at camp. Made with oil, vinegar, Dijon mustard, and dried herbs, it's the perfect companion for any pasta salad.

Ingredients
  

  • 1/2 cup extra-virgin olive oil or avocado oil
  • 1/4 cup red wine vinegar or apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced (or 1/2 tsp garlic powder)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon honey or maple syrup (optional) for a touch of sweetness

Method
 

  1. In a small bowl or a mason jar, combine the vinegar, Dijon mustard, minced garlic (or garlic powder), dried oregano, dried basil, salt, and pepper. If using, add the honey or maple syrup.
  2. Whisk or shake vigorously until the salt is dissolved and the mustard is well incorporated.
  3. Slowly drizzle in the oil while whisking continuously, or add the oil to the jar, seal tightly, and shake hard for 30 seconds until emulsified.
  4. Taste and adjust seasoning. For a camping trip, pour the dressing into a leak-proof bottle or a small mason jar with a tight lid.
  5. At camp, shake the dressing well before pouring over cooked, cooled pasta and your favorite vegetables. Toss and serve immediately, or refrigerate until ready.
