Pineapple Camping Recipes: Sweet and Savory Ideas for the Trail

This campfire pineapple chicken foil packet combines sweet pineapple, tender chicken, and bell peppers in a smoky one-pouch meal that’s ready in 20 minutes.

Ingredients
  

  • 1 cup fresh pineapple chunks 1-inch pieces
  • 2 boneless chicken thighs about 6 oz each, cut into bite-size pieces
  • 1 red bell pepper seeded and sliced into strips
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon fresh ginger grated, or 1/2 tsp ground ginger
  • 1 lime juiced
  • salt and black pepper to taste
  • 2 tablespoons vegetable oil for the foil

Method
 

  1. Build a campfire and let it burn down to medium-hot coals, or preheat a camp stove with a skillet.
  2. In a bowl, whisk together soy sauce, brown sugar, ginger, lime juice, salt, and pepper. Add chicken, pineapple, and bell pepper. Toss to coat.
  3. Tear off two 18-inch sheets of heavy-duty aluminum foil. Lightly oil the center of each sheet.
  4. Divide the chicken mixture evenly between the two foil sheets. Fold the foil over to create a packet, crimping the edges tightly to seal.
  5. Place packets directly on hot coals or on a grill grate over medium heat. Cook for 18–20 minutes, flipping once halfway through.
  6. Carefully open one packet—steam will escape. Check that chicken is cooked through (no pink inside). Let rest 2 minutes, then serve directly from the foil.
