One-Pan Papaya Recipes for Camping: Fresh & Easy Meals

A one-pan camping meal featuring ripe papaya, chicken, and bell peppers cooked in a single skillet over a camp stove or fire. The natural sweetness of the papaya balances the savory spices, making it a quick, satisfying dinner.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 ripe papaya, peeled, seeded, and cut into 1-inch cubes about 2 cups
  • 1 boneless, skinless chicken breast (about 8 oz), cut into bite-sized pieces
  • 1 red bell pepper, sliced into strips
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • to taste salt and black pepper
  • 1 tablespoon fresh lime juice optional, for serving
  • 2 tablespoons fresh cilantro, chopped optional, for garnish

Method
 

  1. Prepare the papaya: Peel the papaya, cut it in half, scoop out the seeds, and dice the flesh into 1-inch cubes. Set aside.
  2. Heat a large skillet or camping pan over medium heat (if using a campfire, set a grate over medium-hot coals). Add the olive oil and let it shimmer.
  3. Add the chicken pieces in a single layer. Cook for 4-5 minutes, stirring occasionally, until browned on all sides. Season with a pinch of salt and pepper.
  4. Add the sliced bell pepper and red onion to the pan. Cook for 3 minutes, stirring, until the vegetables begin to soften.
  5. Stir in the minced garlic, cumin, and smoked paprika. Cook for 30 seconds until fragrant.
  6. Gently fold in the papaya cubes. Cook for 2-3 minutes, just until the papaya is warmed through and slightly caramelized. Do not overcook or it will become mushy.
  7. Remove the pan from the heat. Squeeze fresh lime juice over the top and sprinkle with cilantro if using. Serve immediately directly from the pan or onto plates.
