No-Fuss Avocado Salad for Camping: Fresh & Easy

A fresh, no-cook avocado salad with cherry tomatoes, cucumber, red onion, and a zesty lime dressing, perfect for a quick camp lunch or dinner. This recipe is designed to be made entirely at your campsite with minimal gear and cleanup.

Ingredients
  

  • 2 ripe but firm avocados halved, pitted, and cubed
  • 1 cup cherry tomatoes halved
  • 1 cup English cucumber diced (no need to peel)
  • 1/4 cup red onion finely diced
  • 1/4 cup fresh cilantro chopped (optional)
  • 2 tablespoons fresh lime juice about 1 lime
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt more to taste
  • 1/8 teaspoon black pepper freshly ground

Method
 

  1. At your campsite, set up a clean cutting board. Halve the avocados, remove the pits, and score the flesh into cubes inside the skin. Scoop out the cubes into a medium bowl.
  2. Add the halved cherry tomatoes, diced cucumber, red onion, and cilantro (if using) to the bowl.
  3. In a small cup or jar, whisk together the lime juice, olive oil, salt, and pepper. Pour over the salad.
  4. Gently toss everything to combine. Taste and adjust salt or lime as needed. Serve immediately. Store any leftovers in a sealed container in your cooler for up to a few hours — the lime juice helps slow browning.
