Light Peach Dessert for Camping: No-Bake & Easy

A no-bake light peach dessert cooked in foil packets over a campfire. Fresh peaches are sweetened with honey and brightened with mint, creating a simple, refreshing treat.

Ingredients
  

  • 4 ripe peaches firm but not hard
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon fresh mint leaves finely chopped, plus extra for garnish
  • 2 tablespoons water
  • heavy-duty aluminum foil 12x12 inch sheets

Method
 

  1. Wash and slice the peaches: cut each in half, remove the pit, then slice into 1/2-inch wedges. Leave the skin on for texture and nutrients.
  2. In a small bowl, mix the honey, chopped mint, and water until combined.
  3. Lay out four 12x12 inch sheets of heavy-duty aluminum foil. Divide the peach slices evenly among the centers of each sheet.
  4. Drizzle the honey-mint mixture over the peaches, dividing it equally.
  5. Fold the foil into packets: bring the two long sides together and fold down twice, then crimp the short ends tightly to seal. Leave a little space inside for steam.
  6. Cook the packets over a campfire or on a camp stove grate. For a campfire, place them on hot coals (not direct flames) for 10-15 minutes. For a stove, cook over low heat for 12 minutes. Flip once halfway through.
  7. Carefully open a packet to check: peaches should be tender and release juice. Let cool for 2 minutes before serving. Garnish with fresh mint if desired.
