Light Avocado Recipes for Camping: Fresh No-Cook Ideas

A creamy, no-cook avocado and lime wrap that's perfect for a light lunch at camp. The lime juice keeps the avocado fresh, and black beans add protein without needing heat.

Ingredients
  

  • 2 ripe avocados medium-sized
  • 1/4 cup fresh lime juice about 2 limes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can black beans 15 oz, drained and rinsed
  • 1/2 cup corn kernels canned or thawed frozen
  • 1/4 cup fresh cilantro chopped
  • 4 large flour tortillas or corn tortillas
  • 1/2 cup shredded lettuce optional

Method
 

  1. At home: Drain and rinse the black beans. Pack them in a small container. Pack the corn, cilantro, salt, pepper, and lime juice in separate containers. Keep the avocados whole and unripe.
  2. At camp: Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Add the lime juice, salt, and pepper. Mash with a fork to your desired consistency — chunky or smooth.
  3. Stir in the black beans, corn, and cilantro until combined.
  4. Lay a tortilla flat. Spoon about 1/2 cup of the avocado mixture down the center. Add shredded lettuce if using.
  5. Fold in the sides, then roll tightly from the bottom. Repeat with remaining tortillas.
  6. Serve immediately. These wraps are best eaten fresh, but they'll hold for an hour or two in a cooler if wrapped in foil.
