Homemade Cod: A Simple Camping Dinner That Works

A simple one-pan camping recipe for homemade cod cooked in a foil packet with lemon, garlic, and herbs. Minimal prep, no fishy smell, and easy cleanup.

Ingredients
  

  • 2 cod fillets (6 oz each) fresh or fully thawed
  • 2 tablespoons butter or olive oil divided
  • 1 lemon sliced into thin rounds
  • 2 cloves garlic minced
  • 1 teaspoon dried dill or parsley
  • salt and black pepper to taste
  • 2 sheets heavy-duty aluminum foil about 12x18 inches each

Method
 

  1. Lay out two sheets of heavy-duty aluminum foil, each about 12x18 inches.
  2. Place one cod fillet in the center of each foil sheet. Season both sides with salt, pepper, and dried dill or parsley.
  3. Top each fillet with half the minced garlic, 1 tablespoon of butter or olive oil, and 2-3 lemon slices.
  4. Fold the foil tightly into a packet: bring the long sides together and fold down twice, then crimp the short ends. Leave a little air space inside.
  5. Cook the packets on a camp stove over medium heat for 12-15 minutes, or on hot campfire coals for 10-12 minutes (flip once halfway). The cod is done when it flakes easily with a fork.
  6. Carefully open the packet away from your face to avoid steam. Serve directly from the foil.
