Place apple scraps in a clean glass jar. They should fill about half the jar.
Dissolve sugar in water and pour over the scraps until fully submerged. Leave 1-2 inches of headspace.
Cover the jar with a cloth and secure with a rubber band. Store in a dark, room-temperature spot for 1 week. Stir daily.
After 1 week, strain out the solids and return the liquid to the jar. Cover again with cloth.
Let it ferment for 3-4 more weeks, tasting weekly. Once it reaches your desired tanginess, transfer to a bottle with a tight lid.
