At home or at camp, preheat your Dutch oven or camp stove to 350°F (175°C). For a Dutch oven, place about 8–10 hot coals under the oven and 12–14 on the lid.
Grease a 12-cup muffin pan or line with paper liners. If using a Dutch oven, place the pan inside.
In a large bowl, mash the bananas with a fork until smooth. Stir in the melted coconut oil, honey, eggs, and vanilla.
Add the flour, baking soda, cinnamon, and salt. Stir just until no dry streaks remain. Fold in the chocolate chips.
Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Bake for 18–22 minutes, rotating the pan halfway if using a camp stove. Muffins are done when a toothpick inserted in the center comes out clean.
Cool in the pan for 5 minutes, then transfer to a wire rack or plate. Serve warm or at room temperature.
