Healthy Banana Banana Bread for Camping Trips

A moist, fiber-rich banana bread made with oats and honey, designed for no-oven baking in a foil packet over a campfire or camp stove. Perfect for a nutritious breakfast or trail snack.

Ingredients
  

  • 3 medium ripe bananas mashed
  • 1 1/2 cups rolled oats not instant
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup chopped walnuts optional

Method
 

  1. Mash the bananas in a bowl until smooth.
  2. Stir in the oats, honey, melted coconut oil, vanilla, cinnamon, salt, and baking soda. Mix well.
  3. Fold in walnuts if using.
  4. Lay a 12x18-inch sheet of heavy-duty foil on a flat surface. Lightly grease the center.
  5. Spoon the batter onto the foil and shape into a 6-inch log. Fold the foil tightly into a sealed packet, leaving a little room for expansion.
  6. Place the packet on a grate over low campfire coals (or on a camp stove at the lowest heat). Cook for 18-22 minutes, rotating every 5 minutes.
  7. Carefully open the packet (steam will escape). The bread should be firm and golden. Let cool for 5 minutes before slicing.
  8. Slice and serve warm, or wrap back in foil for a trail snack.
