Berry Camping Recipes: No-Bake & Skillet Ideas

A simple, no-bake berry dessert for camp: a creamy, sweet berry pudding that sets in the cooler. Perfect for warm evenings when you want a refreshing treat without a fire.

Ingredients
  

  • 2 cups fresh or frozen mixed berries (blueberries, raspberries, blackberries) thawed and drained if frozen
  • 1 cup heavy cream kept cold in cooler
  • 3 tablespoons honey or maple syrup adjust to taste
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed graham crackers or granola for topping
  • Optional: mint leaves for garnish

Method
 

  1. In a bowl, mash half the berries with a fork until chunky. Leave the other half whole.
  2. In a separate bowl, whip the heavy cream until soft peaks form. Fold in honey and vanilla.
  3. Gently fold the mashed berries into the cream mixture. Then fold in the whole berries.
  4. Spoon the mixture into four small bowls or cups. Top with crushed graham crackers or granola.
  5. Optionally, garnish with a mint leaf. Serve immediately, or refrigerate for 30 minutes to set. Keep cold in your cooler until serving.
