Backyard Pineapple Casserole: Sweet Side for Camp Stoves

This backyard pineapple casserole is a sweet-savory side dish that bakes beautifully on a camp stove or over a fire. Crushed pineapple, sharp cheddar, and a buttery cracker topping come together in one cast iron skillet for an easy, crowd-pleasing camping meal.

Ingredients
  

  • 1 can (20 oz) crushed pineapple in juice, undrained
  • 1/2 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups shredded sharp cheddar cheese packed
  • 1/2 cup unsalted butter, melted divided
  • 1 cup buttery round crackers (like Ritz), crushed about 20 crackers

Method
 

  1. In a medium bowl, stir together the undrained crushed pineapple, sugar, and flour until combined.
  2. Fold in the shredded cheddar cheese and 2 tablespoons of the melted butter. Mix until the cheese is evenly distributed.
  3. Grease a 10-inch cast iron skillet or line it with heavy-duty aluminum foil (for easy cleanup). Pour the pineapple mixture into the skillet and spread it evenly.
  4. In a small bowl, combine the crushed crackers with the remaining 6 tablespoons of melted butter. Stir until the crumbs are fully coated. Sprinkle the buttery crumb mixture evenly over the pineapple layer.
