5-Ingredient Pineapple Recipes for Camping

Five easy 5-ingredient pineapple recipes perfect for tent camping: grilled pineapple with honey, pineapple chicken foil packets, tropical campfire skewers, pineapple black bean salsa, and pineapple upside-down cake in a Dutch oven.

Ingredients
  

  • 1 whole fresh pineapple peeled and cored, cut into rings or chunks
  • 2 tablespoons honey
  • 1 teaspoon cinnamon optional
  • 1 pound boneless chicken thighs cut into chunks
  • 1 cup canned black beans rinsed and drained
  • 1 red bell pepper diced
  • 1 jalapeño minced (optional)
  • 2 tablespoons lime juice
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 egg
  • 1 stick butter melted

Method
 

  1. Prepare the pineapple: Cut off the top and bottom, stand it upright, and slice off the skin. Cut into 1-inch rings or chunks.
  2. For grilled pineapple: Brush rings with honey and sprinkle cinnamon. Cook over medium heat on a greased grate for 4-5 minutes per side until caramelized.
  3. For pineapple chicken foil packets: Divide chicken and pineapple chunks among four 12x12-inch heavy-duty foil sheets. Drizzle with honey and a pinch of salt. Fold into packets, sealing tightly. Cook on hot coals for 15-20 minutes, flipping once.
  4. For campfire skewers: Alternate pineapple chunks and chicken on metal skewers. Brush with honey. Grill over medium heat, turning every 4 minutes, until chicken is cooked through (about 12 minutes total).
  5. For pineapple black bean salsa: Mix diced pineapple, black beans, bell pepper, jalapeño, and lime juice. Serve cold with tortilla chips or as a side.
  6. For Dutch oven pineapple upside-down cake: Line a 10-inch Dutch oven with foil. Melt butter in the bottom, sprinkle brown sugar, and arrange pineapple rings. Mix flour, milk, and egg into a batter. Pour over pineapple. Bake over 10-12 coals on top and 6-8 below for 25-30 minutes until golden. Invert onto a plate.
