20-Minute Pineapple Salsa for Camping: Sweet, Spicy, No Fuss

This fresh pineapple salsa comes together in 20 minutes with no cooking required. Sweet pineapple, spicy jalapeño, tangy lime, and fresh cilantro create a bright side that's perfect with grilled fish, tacos, or tortilla chips at the campsite.

Ingredients
  

  • 2 cups fresh pineapple, diced small (about 1/2-inch pieces)
  • 1/3 cup red onion, finely diced
  • 1 small jalapeño pepper, seeded and minced
  • 1/3 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice (from about 1 lime)
  • 1/4 teaspoon salt
  • pinch of sugar (only if pineapple is tart) optional

Method
 

  1. At home: Dice the pineapple, onion, and jalapeño. Chop the cilantro. Squeeze the lime juice into a small leak-proof bottle. Pack each ingredient in separate small containers or zip-top bags and store in the cooler.
  2. At camp: Combine the pineapple, red onion, jalapeño, and cilantro in a medium bowl or wide-mouth jar.
  3. Add the lime juice and salt. Stir gently to combine. Taste and add a pinch of sugar if the pineapple is not sweet enough.
  4. Let the salsa rest for 5 minutes at room temperature so the flavors meld. Serve immediately with tortilla chips, on grilled fish tacos, or alongside any campfire-grilled meat.
  5. Storage: Keep any leftovers in a sealed container in the cooler. Use within 24 hours for best texture and flavor.
